This facilitates easy separation of the berries from the branch and reduces the content of tannins and tannins. There is no need to fear that the elements that promote fermentation will be removed from the rowan in boiling water. This berry is essentially a natural antiseptic and preservative.

So, recipes for rowan tincture with moonshine require the following ingredients:

  1. Red rowan – at least 5 kg;
  2. Sugar – 5 kg;
  3. Purified water – 12-15 l;
  4. Pressed yeast – 250 g or dry yeast – 50 g;

Often, instead of yeast, in order to give the distillate additional aroma, grape cake or dried raisins are used. 100 g of cake will be enough, a handful of raisins, half a glass.

Now - a step-by-step recipe for making mash with red rowan.

  • First, you should put the rowan berries in a colander, rinse well with boiling water and remove all excess - branches, leaves, etc.
  • Grind the rowan berries as thoroughly as possible - for example, using a blender or meat grinder;
  • Place the resulting puree in a well-disinfected 30-40-liter container made of glass, stainless steel or food-grade plastic;
  • Add sugar, pour over warm water (not higher than +35°C), mix everything well until the sugar is completely dissolved;
  • Add yeast, previously fermented in water at +30°C, with added sugar at the rate of 100 g of sugar per 0.5 liter of water. You can immediately pour the yeast into the mixture without preliminary fermentation, but then the fermentation process of the wort will begin a little later;
  • Mix everything thoroughly, then cover with gauze. Infuse the wort in a dark room for 3 days at a temperature of +18-30°C.

Important! The temperature must be stable!

  • When obvious signs of fermentation appear (hissing, foam, characteristic odor), it is necessary to place a water seal on the container instead of gauze. It will simultaneously remove carbon dioxide and protect against air entry. The role of a water seal can be played by a rubber glove with one punctured finger;
  • During the first 7-10 days of fermentation, you must thoroughly stir the mash at least once a day and skim off any rising foam.

Red rowan mash should be infused for, on average, 10 to 20 days, but this can take up to a month and a half. It all depends on the temperature in the room where the container is stored and the type of yeast used.

When the gas evolution has stopped, and the infusion is clearly divided into 2 parts - a transparent light liquid and sediment, you can be sure: the mash is ripe and ready for distillation! Additionally, this is confirmed by the persistent alcohol smell and the sour-bitter “rowan” taste. Under no circumstances should the mash be left to sit too long, otherwise it may begin to turn into vinegar, and all your work will go down the drain.

Distillation of mash

It is immediately worth noting that it is better to distill red rowan mash not once, but twice. When distilling mash from red rowan, you need to take the following steps:

  • The light liquid must be poured into the distillation cube, preferably through a straw. You need to make sure that sediment does not penetrate there, since during distillation it will significantly spoil the taste of the moonshine. Plus, yeast also precipitates, which also does not contribute to increasing aroma;
  • Distill the mash for the first time in a moonshine still, almost to dryness;
  • Determine the strength of the resulting moonshine and calculate the amount of pure alcohol. To do this, convert the volume into milliliters, multiply by the actual alcohol content, and divide by 100. When the strength drops to 30%, distillation stops;
  • Next, you need to dilute the distillate with water until the strength drops to 20% and re-distill;
  • One of the main points of the entire distillation process. The first 10% of the product is removed and removed - this is the harmful fraction, the “head”. Due to the high content of methyl alcohol, acetone and aldehydes, it is extremely dangerous to use; use is limited to technical purposes;
  • Carefully collect the remaining moonshine (“body”) until the strength drops to 40%. It is necessary to stop collecting the “body” in time so as not to catch the “tail” - the third fraction with fusel oils, which give turbidity, unpleasant odor and taste;
  • The finished moonshine is diluted with water to 40-45 degrees, poured into containers and tightly sealed. It should sit for at least 3-4 days, or even better, a week. During this time, the taste of the drink will stabilize and it will be ready for consumption. The output from the specified amount of ingredients should be about 6 liters of moonshine.

Cleaning

To be more confident in the destruction of harmful substances, it is worth carrying out additional cleaning of the finished product. For mountain ash, the charcoal cleaning method is perfect. You need to put coals in a container with moonshine, at the rate of 50 g of coal per 1 liter. Leave for a week, shaking thoroughly 2-3 times a day, then another week, without shaking. At the end, the moonshine is filtered through cheesecloth.

Alternative cleaning methods are also used - using milk, potassium permanganate, etc. However, the opinions of experienced moonshiners about the real need for additional cleaning are not so clear. Some of them are convinced that rowan tincture on moonshine does not need purification, and double distillation will be enough.

Harvesting and storage of berries

The collection takes place in October or November. The berries are picked from the trees and stored fresh in the refrigerator at a temperature of about +2°C for several months. Dried rowan retains its healing properties for about 2 years. To dry, lay it out in a thin layer and keep it in a ventilated room or in an oven at 40°C. If the berries do not release juice when pressed, they are poured into a glass container, tightly closed and put in a dark place.
