Chokeberry tea: recipes


When talking about rowan, many people immediately imagine red clusters of berries. But today we will talk about chokeberry, which is similar to the usual one only in name and relation to the Rosaceae family. Chokeberry belongs to the genus Aronia. This is a shrub no higher than three meters in height. North America is considered the birthplace of chokeberry. It was first noticed by I.V. Michurin. He brought the plant to Gorno-Altaisk, where the currently popular garden crop was bred at the Altai fruit and berry station.

Composition of chokeberry

Medicinal raw materials are fresh fruits, which are harvested in early autumn. The fruits are collected in wooden boxes or baskets. They can be kept fresh for three days; the fruits are dried at a temperature not exceeding 60°C. Chokeberry leaves also have beneficial properties.

Aronia fruit contains:

  • fructose and glucose (up to 10%),
  • vitamin P (about 2000 mg%),
  • carotene,
  • vitamin C (about 100 mg%),
  • anthocyanin pigments (up to 6.4%),
  • vitamin PP,
  • vitamins E and B,
  • microelements - fluorine, boron, iodine compounds, manganese, copper, molybdenum, iron,
  • tannins and pectin substances,
  • amygdalin glycoside.

Harvesting and storing rowan

To pick berries, choose a sunny and dry day; it is best to do this in the morning.

Harvesting begins in September, when the berries have already acquired their bright red color. At this time, they are collected in order to dry them, because they are not yet fully ripe and taste very bitter. They are removed from the branches in clusters and placed in large boxes or crates, and then hung in a cool place. After some time, it will be possible to make tea from them.

Ripe berries are harvested in November, after the first frost. By this time, they cease to be bitter, have a sweetish taste and are easily separated from the branches. However, ripe berries do not last long, so they are either frozen or made into jam.

Chokeberry, or chokeberry, is also harvested in the fall. The process of harvesting it will be no different from collecting and storing ordinary mountain ash.

How to Make Fermented Leaf Tea

Preparing a drink from leaves, especially if they are leaves of fruit trees or shrubs, is a delicate science. To obtain a more intense aroma, regular drying may not be enough. Fermentation is a more complex process of preparing the leaves, which, however, ensures a bright taste. How to prepare fermented raw materials?

1. Collect plant leaves. Please note that before starting the preparation, the raw materials should not be washed under any circumstances, which means that the leaves for your future tea must be clean initially. Dirty or damaged leaf blades should not be torn off.

2. Place the collected leaves in a dry and well-ventilated place away from direct sunlight, for example in the attic, on a cotton or linen cloth.

3. After 12 hours, check the raw materials for “crispness”. If, when squeezing the leaf blade, you do not hear the crunch of the central vein, then the leaves are ready for the next stage; if not, leave them to dry for a few more hours.

4. Roll the slightly wilted leaves into tubes and roll them between your palms, then place them in a thick layer in a glass or enamel bowl under pressure and cover with a damp cloth. As soon as the raw material begins to emit a strong aroma under pressure, begin the drying process.

5. Place the fermented leaves on a baking sheet and place in the oven, preheated to 100°C, gradually reducing the temperature to 50°C.

6. When the bulk of the leaves become brittle, take the baking sheet to a dry and ventilated room (also away from sunlight) and leave for some more time.

7. Place the raw materials in linen bags and store in a dark and dry place.

The raw materials prepared in this way can be used as regular crumbly tea leaves or placed in special paper bags.

If you freeze berries at temperatures below minus 15°C, then the natural sugar in them does not have time to turn into starch. At zero temperatures, rowan can also be stored for a long time.

Thawed chokeberry fruits cannot be re-frozen - in this case, most of their medicinal properties for the body will actually be lost.
